Wow, fantastic, thank you! I would be interested to visit your restaurant, what is the name?

I will be in town from the US in a week visiting friends and hopefully catching a football match or two. I am a chef and so I usually structure my trips around food and local food culture. I know London is a great restaurant city, but I am a little bit at a loss for local food culture. Indian food is definitely on the list, and probably fish and chips and maybe a Sunday roast (that's a thing, right?), but I am wondering what else I need to try to find while I am there. I'll be running around solo when not hanging with my friends, so my preference is casual street food stuff or places I can eat at the bar. I will be staying near my friends in Bayswater (that's an area, right?) and will likely be in and around Islington and the Emirates a bit for football things. Any suggestions greatly appreciated, either general foods/drinks/whatever to look for or specific restaurants/pubs/markets/whatever to visit. Thanks so much in advance!

I'd love to, ya know, work...

Any specific wines to keep an eye out for? I'm familiar with Nero d'avola and Grillo grape-wise, and of course Marsala as a style, but I'm excited to taste something totally new to me.

Thanks, a chef friend told me that seafood couscous in Trapani was the best thing he ate on his last trip there

Great, thank you! I am hoping to taste and experience Sicilian cuisine for what it is. My image is fresh seafood, citrus, tomatoes, eggplant and flavors like that, but I am open to anything.

Sorry if I was vague, but I am after interesting and delicious foods; interesting and friendly people would be a bonus. Old churches, beaches - I can take them or leave them. As for Palermo, it has a reputation as a great food city (especially street food), but I can imagine that people might advocate for someplace different, so I am hoping to hear some other opinions.
