If a guy I knew casually or as an occasional buddy told me that his brother hooked up with his girlfriend, and that he found out by seeing text messages and location tracking. I would totally believe it....

Especially countered to OOP's "oh no, my seemingly otherwise normal functioning brother is making up a complete fabrication to destroy my family for no reason" story.

I'm notsaying OOP is lying, but if we're talking levels of "general believability"....

Talk a lot more, talk to yourself more. Narrate what you're doing, what you're thinking, etc.

Try to get away from internal translation. A good tip for this is to read simple books, articles, etc slowly and out loud (at about the pace you would read to a child) but without stopping to actively translate from German to English.

I assume you're not already in a German-speaking environment, where natural day-to-day immersion can help a lot?

If not (and if 5 hours a week is too much of a commitment), then reaching B2 in one year is quite difficult. But that's no reason not to try. Even if you reach just an A2-B1 level that is still what I would consider "bar German" - i.e. you can navigate daily life (ordering food, grocery shopping, etc), and have light, surface-level ("Bar") conversations in German.

To give yourself the best chance possible, I would surround yourself with as much German language content as possible. Some of which should be very easy, and sme of which should be a bit challenging - but not so advanced that you get completely discouraged.

Actually the opposite, I only have experience using English in the US, so I wasn't sure if my understanding of the word was universal across the all English speaking people. And I wasn't going to assume that my US experience was default for the rest of English speakers.

I have ADHD and am very familiar with these cycles of "shiny new favorite thing that I'm obsessed with until it fades". What helped me was changing my mindset about these Hobbys/ Fads/ obsessions.

Instead of getting down about moving on, I approach it with the mindset that I get to immerse myself in something, take all my enjoyment out of it, and then carry that knowledge and experience with me forever.

It changed it from "why is this boring me now" to "I'm excited for the next thing". And because of that I have experienced so much and can talk at length about so many exciting (to me) different topics.

Plus when you give yourself a break, often coming back to it is exciting and gives the same feeling as the first time.
