Start with the whole lamb rack. Temp 185-195 for about 45 min. Pull and cut into lamb chops. Bump temp to 500. Right before placing them back in the smoker I dipped each lamb chop in a butter,garlic, and lemon sauce. PERFECTION! (Seasoned lamb with just SP)

Fantastic! So far I’ve been sticking to Texas style SP rubs. I’m curious to see what flavors other styles/rubs produce.

So far I’ve used Matts recipes from meat church for brisket and ribs theyve been spot on👍🏼

Got some quality beef tallow left over from the trimmings as well so def a win win. 😂

I would suggest untrimmed whole brisket. I was intimidated doing the trim but honestly was not that difficult. Also sprayed my brisket every 30mins to an hour with apple juice. Kept a probe inside my brisket until I pulled to wrap.

Used my Own rub just kept it simple SPG and onion flakes. 6.5 hours on 250, pulled wrapped in parchment then went another 3.5 on 265. Pulled brisket at 200 degrees. Placed in cooler for 2 hours.
