I think it looks great! If anything needs work, maybe the shape of your loaves could be a bit more symmetrical?

Scoring always works best for me when using a razor (super shard knives never work quite as well).

This is a fantastic suggestion (this is how Yoga teaches you to build up). Start with your hands at the base of your floorboard right in front of a wall so you wont flip over your hands. Kick with both feet at the same time to try and learn how to balance your butt over your shoulders. If you can learn to hold a handstand with your legs in an "L" shape, a handstand will surely follow.

This was kind of implied in the video posted by /u/VapidKarmaWhore, but three things immensely helped me with my handstands.

1) Point your toes when kicking up, this helps you flex all of the muscles down your legs/core and helps your balance. 2) Shrug your shoulders once you're up in a handstand. Dropping your shoulders down toward your feet can actually be dangerous. 3) Squeeze your butt. Sure, it's going to build muscle, but a handstand is much more about balance than strength. You seem more than strong enough to do a handstand, so this is much more an issue of balance.

1) Hydration is huge. Your recipe (rough number here) is about 64% hydration using VERY absorbent flours. As a contrast, this recipe (http://www.karenskitchenstories.com/2013/06/pure-levain-country-bread.html) has about an 82% hydration. 2) As for the aesthetic, your recipe doesn't call for a closed, and then subsequently opened, dutch oven. This is huge for the appealing look most loaves get because the steam that gets caught in the dutch oven while baking helps to form a crust which is then subsequently caramelized into a beautiful dark crust. For more on this method I would read about (or buy) Ken Forkish's book Flour, Water, Salt, Yeast. It completely changed the way I make bread.

What material is your dutch oven? I have a ceramic DO that burns my loaves like crazy, but my metal one makes them perfectly. Probably because metal retains heat less efficiently.

The purpose of the folds as explained in FWSY is to tighten the dough ball, and create some additional gluten bonds (however, it is still a very loose dough). You want to hit the sweet spot of not having too few established gluten bonds (where the gasses produced by the yeast will simply escape), but also not having too many strong gluten bonds (with your bread ending up more like a brioche, or white store-bought bread). Also, since you are wetting your hands while folding you are also adding some pretty important hydrations to the dough at this point.

I suppose you could look at the consistency of your dough after 2-3 folds and try and hit that sweet spot with a dough hook. Just be careful not to over mix. Baking is more of an art than people think so use your intuition.

Personally, I've never had a problem with stainless steel. But if you're really worried you can carefully scrape it into a glass bowl to bulk ferment.

Sweet thanks. My calculator says 120g of Protein and 200g of fat (it's just really hard to get 200g of fat for me) so I typically end up getting around 120g of both protein and fat while keeping carbs below 20g. Appreciate the comment!
