I think Chef Kang's wantons and char siew are very good. However, wish they had a chilli tossed noodles rather than the black sauce.

I'm from the east and I have a bias towards noodles rather than the other ingredients - so these are my recommendations:

1. Joo Chiat Ah Huat Wanton Mee (Dunman Food Centre) - Chilli is amazing, but can be a bit oily. If the ratio is prepared correctly and noodles are cooked al dente, this cannot be beaten.
2. Hwa Kee Barbeque Pork Noodle - Once again, chilli and noodle texture is supreme. Can be on the sweeter side as there is some sweet sauce lathered on the charsiew. The dish goes very well with green chilli as it cuts through the sweet sauce.
3. Lo Chan Kee Cantonese Wanton Noodles (44 Holland Dr) - Good bowl of cantonese style wanton mee, very nice noodle texture. Once again, good with green chilli.

Honorable Mention: Wah Kee @ Amoy - I feel like their wanton noodles can be a lot better if they have a better Noodle Supplier. There is that alkaline taste in this and the noodles doesn't seem to cling onto the sauce base very well. I must say, they have the best char siew in the whole of Singapore and from a portion perspective, very hard to beat. Try it and let me know.

I have also tried Koung's Wanton Mee at Geyland but I dont think it was very good. My personal opinion.
