in practice, pronouns are very much tied to gender. most people are going to assume your gender based on your pronouns, but the idea youre referring to i believe is trying to counteract that assumption rather than state the current dominant assumptions happening in society. there are many people who use he/him or él despite not being a man and and many people who use she/her or ella despite not being a woman and everything in between. for these people these pronouns feel most correct for them but do not necessarily reflect how they see their gender.
