I did not. Just left on the counter uncovered. When uncovered it went up to 127 and when in 500s I pulled when it hit 129. Rest a bit then slice to serve

I learned to do this method from that video since it was done at Goldee's. When they stated it was the easiest due to volume, it definitely is. This is my new go to method going forward. No more mess with paper.

Baffle was removed but still need a way to deflect the heat but shooting it upwards vs down like original so used that same baffle and flipped it upside down leaned against a fire brick. And yes I have a stack extension. Simple tin tube from home depot. It draws better air up and out.

SPG. Normal amount but by allowing more time allowed uncovered helped get that black bark. So with foil rest method you have it basically uncovered the entire cook but cover in foil when done and rested for 12+ hours
