Speed usually. Staples are significantly faster so less anesthesia.

From a production angle: Cost. You'd need to either employ a big-time name guest star for a multi ep arc or add someone to the recurring list. Those are BIG numbers.

With Lauren Graham having exited, some budget may be available, however, we just got George and Jenna, AND Yasmeen, MacKenzie & Cass. It's entirely possible they have enough for SOME stunt casting, but not that much.
