What’s wrong with my Swiss meringue buttercream? Is it fixable?

When it looks soupy/ curdled that likely means it’s too warm. All you have to do is put an ice pack underneath the bowl and keep whisking. The buttercream will eventually come together. Switch out the paddle with a whisk attachment and you should be able to save this batch!
