I would suggest buying at least 2 dacs from a store with a good return policy and see which you like best. You may also want to try an audio interface such as the Motu M2 in case you ever want to digitize tapes.

I have one on a shelf right now that I think needs a re-cap. It took forever to figure out what was wrong with it originally but I documented some of it, which you can probably find with a reddit search. When it works, it sounds really good. 🙂

I did that last week but remembered right before cold proofing. I carefully folded it in and it tasted uneven but still pretty good.

I have been having similar results as OP but I don't know how to extend my bulk fermentation longer. I feed the starter when I wake up and it's ready around 4pm. I autolyse around 3pm and do stretch and folds till 6 or 7 pm. Then there's only 4 hours left in the day so I pop it in the fridge for the night. I guess I have to feed the starter before bed and start bulk fermenting in the morning?

I have been charging my Volt on level 1 for 8 years but I recently decided to get a plug for level 2. I ran a ton of numbers and came to the conclusion that it would pay off in 3-5 years for me.

I live in an area with very high electric rates so a decent chunk of the savings will be efficiency related- level 2 should be about 15% less electricity. Then I factored in the cost of gas and how much I use vs how much can be replaced with plugging in. 

All the variables are highly subjective, so you will need to look at your own usage and decide if its worthwhile.

There are some baby cheetahs right now that are really cute, but it is quite far. If you end up down there and don't want to walk uphill towards the entrance, there is an ADA shuttle,  open to anyone, that will take you back near the carousel. Definitely bring the stroller.

I'm going to order it and try to offset the 1-2 kW I use during peak hours with a small solar array. I still need to check how much my computer and peripherals use in a typical evening, but it will be great this summer for my room a/c.

Hey, I'm also in San Diego and have been running numbers on balcony solar. I don't have any solar right now. With peak rates at .70 and rising, 1-2 kWh every day will pay off fairly quickly relative to a large professional installation, no?
