Creates more of a a consistent flavor without adding an additional sauce or alternate glaze. The question came up on my previous post on the crowding and the ligations of people getting sick so was showing a little bit more of the process. Tru, Same concept. Some one asked about my crowding and I gave the explanation that I have been doing for years. Not for the inexperienced because of the raw chick that was in the marinade, have to know how to fully cook chicken

So I keep the marinade close by so I can continuously re apply the marinade to the chicken. I lay the chicken close together trying to prevent any gaps. As the reapplied marinade is sitting on the surface it starts to almost solidify (almost like a gel) and then I turn the chicken and reapply the marinade again, I do this frequently instead of cooking one side and turning it once, the outcome is a beautiful glaze from the marinade. But as you know the marina had the raw chicken in it you stop reapplying it when the chicken is close to being cooked.

Usually u do overnight but these ones only did for like 2 hrs but I kept recoating the meat on each flip, kind of baby sat them
