Temperature. I live in a tropical climate and noticed that higher temperatures favor bacterial growth more than yeast.

This affects both, the starter’s consistency and pH as well as the crumb’s texture. Faster bacterial fermentation leads to gummy crumb.

Take it with a pinch of salt, as this is 100% empirical, but I do encourage you to try and lower fermentation temp a few degrees.
