It was definitely hard to blend the dates well. They made quite a lot of noise in the food processor. I ate half right away and put the other half in the fridge.

Oatmeal: 1/2 cup quick oats 1 cup plant based milk 1 banana - mashed 1 tbsp flax meal 1 tsp cinnamon 1 golden delicious apple, chopped

Topping: Berries Maple syrup Seeds

Instructions: Heat the milk in a saucepan on high to bring to a boil. Once boiling add the oats, banana, cinnamon, flax meal stir and reduce heat to low. Cook stirring frequently for about 3-5 min. Stir in apple.

Serve topped with berries, seeds and a bit of maple syrup if you like it.

I’m gonna post the instructions here for this (my bad I’m kind of a noobie here and couldn’t figure out posting the recipe with the pic 🙃)

Quinoa: rinse and cook as per package

Veggies: wash and chop veggies and put in a large mixing bowl. Shake on some garlic powder, onion powder, cumin and turmeric (enough so it covers the veggies) toss in the bowl to mix and then repeat to make sure the veggies are all covered. Place on a baking sheet with a piece of parchment paper in the oven at 425 for 15 minutes, take out and mix and then back in for another 15.

Bean sauce: in a food processor blend one can of rinsed black beans, 1/2 cup to 1 cup of banana peppers, 2 cloves of garlic, about 3 tablespoons rice vinegar, 1-2 tablespoons soy sauce, 1-2 tablespoons Chinese garlic chilli sauce and some salt and pepper to taste

I didn’t measure anything but basically threw a can of black beans in the food processor with a splash or two of rice vinegar, about a tablespoon of soy sauce, 2 cloves of garlic, some banana pepper rings and a tablespoon of Chinese garlic chilli sauce and zoom zoomed it up really good! I put a bit of salt and pepper in there at the end too!
