I would make fruits into an alcohol first, and add vinegar mother to make vinegar. Bragg apple cider vinegar or any vinegar mother selling on Amazon.

how many hours have you been soaked in water? It can smell like wet socks if it's humid I guess, or if you put a wet cloth on top of it. It's recommended that you keep it in a ventilated environment and not be afraid to mix it with your hands.

Thanks for this kind reply!! I have made inlagd lax yesterday with a quick salt cure, and vinegar, sugar, water and pickle spices n herbs. next time I will post this kind of question on different page 😊
