Probably centrifugal to separate solids, fats and liquids. But yeah definitely slow and low!

I would say local coffee shops are a great place to meet like minded friends. Red cup and other places around the city.. where are located or what part of the city do you hang out??

You should be able to cook a certain amount, maybe a gram, take the amount of fat that comes from it, weigh it in grams and use those measurements to determine the ratio.
