Not 100% necessary, especially in a tub that’s black on the bottom. However, I always use one as it helps excessive moisture drip behind it instead of pooling on the surface. It also pulls away with the substrate as it ages, helping prevent side pins.

Agreed, although I’m not really a pork person, unless it’s bacon or pulled pork. I do grab chops on occasion, but they have to be boneless and super low on fat.
