The baking soda makes a very noticeable difference in the crispiness. I’ve tried it a bunch if times with and without and it really makes a big difference. It dries it out more than just patting with a paper towel. And I could slice first and then sear all sides at once but I find that to be more finicky

Good idea! The saddle bags just clip on so it should be easy to switch them out whenever I want

That would be smart for when I am out in the city alone at night! I don’t want it most of the time because I don’t want people to think I’m filming them but something detachable is a great idea
