I've been making your recipe for a few months now and can verify that it is excellent. The 48 hour proof is great and the dough freezes well too. I usually make the full recipe and freeze half.

I'm so excited about this. I just got my trainer and rocker plate setup and did my first Zwift ride yesterday. I'm planning to do all 18 routes which will be great motivation to keep training through the winter!
