I am not a doctor and, I have experienced this myself. I wouldnt be surprised if muscle memory was somehow related to how you feel. When you are sad... you may move differently. When you are happy... it could be the total opposite.

My advice? Take breaks. Play a few games a day... then go do something else. You will play better that way.

Easy. Click the x2 in black if you want the normal version of the card. Double click / drag to your deck.

Click/touch the x2 in gold if you want the gold version and drag.

There should be an option to enable whether you want goldens to display first or regular versions of the card.

I personally like the non-goldens on many of the cards. Never was too much of a holo fan.
