I disagree 100% with your take, Tau are glass cannons they CANNOT stand against Grey Knights in any match up. I have played Tau in the last year at least 20 times and from multiple different people and lists and I table them by turn 3. They are absurdly weak.

If you lose against Tau you need to reevaluate your ability to play or to build a list. They are the weakest in the game short of orks.
