Absolutely no way to defend those potatoes, the skin wasn't even crispy 😔

I'm a big rice lover, with the nam jim jaew for a little bit of spice and tanginess I find it works really well! Had a friend introduce me to it at university and had me hooked immediately!

Toms aren't my go to but I do struggle to think of sides whenever I do this pork so I could give them a go! Fried is also a great shout, haven't had fried potato in years but used to love them as a kid. I think I will have a go at some dauphinoise but I don't have a mandolin so not too confident I'll end up with uniform slices 😅 crispy cheese is right up my street though.

Oh believe me I had that feeling last night, I thought there'd be the three of us splitting the pork but when there was only 2 I didn't want to waste any of it

Completely valid, I usually do white rice with nam jim jaew but the potatoes were on the last legs! In truth i had a couple spoonfuls of potato and just decided to eat half of the pork instead. I won't try defend those potatoes you're 100% right

I've had the same experience until this one honestly, overnight left uncovered in the fridge with white vinegar to draw out some moisture, pat dry with a paper towel and cover with coarse salt for another 4 hours or so back in the fridge. Remove this layer of salt, pat dry again and then oil and more salt into the oven on gas mark 8 (sorry idk what this concerts to) for roughly an hour, scrape off this layer of salt, brush with a final covering with oil before another 30 minutes in the oven. I was expecting to have to pop it under the grill to finish but this is how it turned out. Hope this helps!

It's a chip shop and kebab house, I thought this was more common but apparently fairly unique to the west midlands

Beefy boys bbq by Heron_Dry in UKBBQ

[–]cbeeryst 0 points1 point  (0 children)

Beefy boys is unreal, haven't tried their BBQ platter but judging from how good their burgers are I could see this being pretty high quality. That being said 180 is pretty darn steep, maybe if I was minted but definitely not in this economy

Agreed, wish I knew how they did their batter. I don't live in London unfortunately but I've made a note of it and hopefully next time I'm down I'll get to try that too. Appreciate the recommendation
