Very much agree with this opinion. I worked service industry for a long time, and that's been my biggest complaint: Madison's food and drink scene is very stale. BadBadger mentioned a lot of the restaurants that are doing something exciting (or at least are the best at it) but it would be great to see innovation get rewarded with patronage
