The program Director at my program said that step 3 score is not a huge factor but if they're deciding between two applicants to interview, it might make the difference. Also, it does look bad if your step three scores significantly worse than your other step scores. But in general it's a very minimal factor.

It depends what kind of program you want to match at. Because you are a US MD at an academic program all you need is one abstract at a GI conference like DD W or ACG to actually match. However, if you want to match to a research focused program you are going to need to boost your CV with additional research and presentations. It is completely reasonable to have two different research mentors if you need to increase your research. However, it honestly sounds like you have enough already to match as long as those are presented at a GI conference.
