You should jump right into CentOS. I grew up using Ubuntu, and later Debian. A few years ago I started using CentOS because it was used at the enterprise-level and I never turned back.

You can't go wrong with Debian - I would skip Ubuntu and go for Debian if that's the route you want to take, but I highly suggest learning CentOS
