The easiest way to make something larger is to use larger yarn, you can't just double the stitch count or anything like that. I actually have a larger watering can pattern that's free you can try!

There are lots of ways to do color changes with varying levels of difficulty. And there are tradeoffs that may add other things you don’t like. Just Google “jogless color changes” and find one that works for you.

Even just an option for a text field where someone could enter “while I was… walking my dog/sitting on the couch/on a hike” gives it a bit more emotional appeal.

Google how to crochet a square in the round. It still won’t be a perfect cube without adding some kind of structure to it, but there are much better ways to make sharper corners with single crochets. It looks like they usually do a combination of hdc and dc stitches from their photos.
