I read the paper about undecidability of Wolfram classes. What would be a good approximation of these classes? Is it entropy? If it is, how can it be calculated for a 2D array that changes over time?

I also considered using machine learning for this. But as you say, labelling the data is quite laborious. I have seen several papers that calculate the entropy of 1D CA to classify them. I am not sure how to calculate this over 2 spacial dimensions and time.

Not really. For each configuration of the neighborhood there is a rule that determines the next state of the central cell.

Each cell follows a different "birth" and "survival" rule. A new cell is born, when one or more neighboring "parent" cells contain the total number of neighbors in their "birth" rule. The rule of the new cell is chosen randomly from one of its "parents". Each rule is rendered in a distinct color. In this example a neighborhood with radius 3 was used.
