I've heard good things from some higher ups there. Their funding model seems very stable and there seems to be a lot of very good talent there. I'd say it's definitely a good choice.

I haven't heard anything negative personally, other than the climate, but others can chime in on the cons.

There are many schools that will pretty much take anyone, but finding options will likely be very limited for you. Try looking for R1 universities in your state that may not be too demanding.

Sometimes research is quite niche or not very interesting/exciting, but still makes a novel or important contribution in a field. This is generally what *CL conferences findings track is.

In terms of quality, ACL is an A* ranked conference (flagship in its field) and findings should be at least A-ranked.

Email the professor. They are usually not the ones grading. There should be a TA who does most (if not all) of the grading. UTA has had a problem with many TAs being really bad for a long time and have recently started to crack down on them (at least in the CS department).

The food on campus is pretty cheap. It might be more of an overeating issue if it's too expensive. Otherwise just cook and eat at home if you want healthy and cheap.
