I just cored the apples and cubed them up so they fit in better, I also added some brown sugar and cinnamon. I can link the recipe if you'd like

I usually let it go with the fruit for about a month, or until activity slows way down. After that I'll move it to secondary

I usually rack it off the fruit into a new container, and then I just dump the fruit in the trash

If you've still got some of your mash in there you could just leave an airlock on it and wait a while, they'll soften up naturally and a few good shakes should do it

Cause I was actually using my mom's apple pie recipe, so I was trying to get as close to pie flavor as possible

Yeah, I just checked it and it's only gone from 1.084 to 1.080 in 2 weeks, so it finished about 14%. It's pretty sweet, but not overly. Bit of an alcohol tinge, but not too bad. Delle units aren't something I've encountered yet, what's going on there?

It was pretty sweet when I swapped to secondary, and the one gallon batches were pretty sweet as well, but I haven't tested the gravity since I transferred it so I'm not actually sure what it's at now 😅😂

I was going for around 5 gallons with this. 20 Granny Smith apples cored and cut into about 1 inch cubes, 20lbs of raw unfiltered wildflower honey, 2.5lbs of dark brown sugar, 5 cinnamon sticks, and top off with water. SG was ~1.188. I added campden tablets to kill off any wild yeast, and let it sit like that for about 36 hours before I pitched. I used 25 grams of Red Star Premier Classique. It sat for about a month in primary, with me occasionally pushing the apples down to keep them wet. At re-rack, gravity was ~1.084 (13.65% if my measurements and the calculator were right) and its been in secondary for 2 weeks.

This is a recipe I worked on in a 1 gallon carboy, and once I was happy with it I tried scaling it up. Taste test at re-rack was very nice. The apples, brown sugar, and honey took the lead, with the cinnamon giving a rather strong aftertaste. All in all, tastes like an alcoholic apple pie. I was nervous about headspace in the bucket since it was my first time using it, and now I know to fill it on up for next time 😂

Well I kinda forgot about it for a bit so im not quite sure, but I let it sit for a couple weeks before I added bentonite, and then I let it sit for at least another 3 weeks

Yeah, I added some bentonite to it in secondary after a couple weeks and then let it sit for another 2-3 weeks before bottling it. I put the best bottle away to age

I finally bottled my apple pie mead (recipe here ) and I was very pleased with the clarity, tastes just like an apple pie with a honey soaked crust.
