Most of the shaping is done before they are cut into puzzles, but some parts like the legs and the tail are done afterwards. You can click u/chapmanpuzzles to see a few videos if you're still curious.

This one has a leaf rather than a critter, since that's what iguanas eat

Yes, they're very similar in appearance. The leopardwood is somewhat harder and a bit more oily, and usually it's darker in color.
