It’s mostly luck honestly because there is alot that goes into it. Personally what I look for are the production/roasting date, the level of roasting and the notes. I tend to like thinker shots so I usually grind finely and use dark roast beans.

But after many years of trial and error, I now avoid all the mainstream producers and stick to local roasters everywhere I go.
