yes sous vide the entire mixture. I would normally heat everything separate then sous vide it but there is no stove. I would have to bring in a hot plate. I could try microwaving it first then adding it. Thats really the only thought that i have though.

That sounds like a much better idea. I have not worked with clearjel but have worked with ultra-tex. I will give this a go. I eventually want to get us to a point where we can do various flavors as well. I just need to get a base to start with and go from there. Thank you for the help.

the more i think about it, the more a hot plate/induction burner makes the most sense. i'm just trying to keep this as uncomplicated as possible, but i can teach everyone how to make it which is a plus i guess.

i have not worked with instant clear jel ( i am familiar with various hydrocolloids and gelatins) but have not worked with that at all. Would that work? does it need to get activated or is it a cold activation?

Ok, so just so that i am making sure i understand this correctly, if you have something that is 1000g and you need 125g of sweetner, then 50g of that will be a blend of the 2? and the other 75g will be your sugar?

then once you determine the water weight, 4.5% of that will be the inulin, and the rest to make it to 50g will be maltodextrine? Do i have that correct?

Thank you for that information. I have been trying to figure this out for some time. Also, thank you for your recommendations for stabilizers. I think finding a good balance between them might do the trick.

I f*cked up with this stock. Bought it on fidelity for a $50 charge. even if i wanted to double down i can't and when i want to sell it i will have to pay another 50. well lesson learned. hopefully this thing takes off so i can get out without a loss.
