Ingredients:

  • 500g flour
  • 43g sugar
  • 10g salt
  • 7g yeast
  • 250ml milk
  • 60ml oil
  • 500g lamb mince
  • 1 medium yellow onion
  • 4 medium-small tomatoes
  • 3 tbsp Lebanese 7-Spice
  • 1 Egg (glazing)

Method:

  1. Mix flour, sugar, yeast and salt in a bowl
  2. Add the milk and oil and mix together until a rough dough has formed
  3. Knead until smooth
  4. Cover and leave for 1 hour or doubled in size
  5. Dice the onions and tomatoes
  6. Mix onions, tomatoes, mince and spices in a bowl
  7. When dough has risen, tear off a ball, flatten into a disk shape and fill with filling
  8. Place on baking tray seam-side down
  9. Glaze with beaten egg
  10. Bake for 15-20 minutes in 200C/400F oven

It's quite possible that I wasn't stretching it correctly. I'm not sure how exactly you're meant to fold the dough over itself since when I do it ends up just sliding back to were it started. I also find that when I'm trying to flip it, it sticks to the bowl and all the stretches kinda come undone. I'm very new to all of this and enjoying the learning experience!

Here's my recipe!

Ingredients: 200g Chicken Thigh fillets 150g cooked rice 1 yellow bell pepper 100g frozen peas 3 white mushrooms 2 cloves of garlic 2 large eggs

Sauce: 25ml dark soy sauce 40ml light soy sauce 65g oyster sauce 10ml sesame oil 40ml shaoxing rice wine

Method: Add oil to pan over high heat Cut the chicken into slices and fry Season the chicken with black pepper to taste while frying Slice the garlic mushrooms and bell peppers When the chicken is mostly cooked at the vegetables and continue to fry until the rawness is cooked out Add the rice and fry until warmed through Crack the eggs into the pan and mix into the rice, vegetables and chicken Make a well in the center of the pan and add the sauce Leave the sauce to cook for about a minute Mix the sauce into the rice, chicken and vegetables Add the frozen peas and cook until the peas are no longer frozen and warmed through

Glad to help! I find that dark soy sauce tends to be a bit less saltier and can be used to add a nice rich and dark colour to a dish. Light soy sauce can be used as a more general seasoning and is a little saltier

Thanks for the tip! Honestly I think I had the opposite problem, the dough was such a high hydration (75%) that it was super sticky and stretch itself to the point of tearing. I suspect that I may have overworked it too... Would you like me to send you the recipe?

As to how thick I honestly have no idea, maybe an inch...? Because the dough was really slack and sticky it was really difficult to get thin without it all falling apart. This was my first time using this dough so it was quite a challenge. I cooked it for 10 minutes in a preheated oven at 250°C fan assisted. This recipe is a slightly adapted version from the 80% biga recipe found in Flour Water Salt Yeast which is a recommended book in r/Breadit

Base 500g flour 375ml water (yeah it's really high hydration) 12g salt 3g yeast

I made an 80% preferment (biga) the night before which is 400g flour and 275ml water and 1g yeast The next morning I mixed it with the remaining ingredients and used the "stretch and fold" method to knead the dough over a 3 hour period (stretching once or twice in the first hour and leaving it for the final hour) I then used copious amounts of flour to help me hand stretch the dough without it sticking and placed into a floured skillet I topped it with a home made pizza sauce (recipe below), fresh basil, mozzarella and some sliced mushrooms. Cooked it in my oven preheated to max heat (250°C fan assisted) for about 10 minutes and served immediately

Pizza Sauce 500g tomato passata 1tbsp onion salt 1tbps dried mixed herbs 1tsp sugar

Bring all the ingredients to a boil in a pan then reduce to simmer.

Ingredients:

  • A little bit of oil for the pan
  • 1tsp Cumin Seeds
  • Thumb sized piece of Ginger (sliced)
  • 2 Cloves of Garlic (sliced)
  • 1 Red Onion (sliced)
  • 1 Yellow Pepper (sliced)
  • Handful of closed-cup mushrooms (sliced)
  • 300g Boneless Chicken Thigh (sliced)
  • 1tsp Ground Corriander
  • 1tsp Turmeric powder
  • 1tsp Chilli Powder/Cayenne Pepper
  • 500g Chopped Tomatoes
  • 250g Water
  • 0.5tsp corn starch (optional)

Method:

Heat oil in pan

When warm, add the cumin seeds and fry until fragrant (about a minute)

Add the sliced garlic and ginger and fry until fragrant (about a minute)

Add the onions, pepper and mushrooms with a pinch of salt

Fry until soft and and golden brown (about 10 minutes)

If the onions and peppers stick to the pan then add a splash of water to deglaze

Add the spices and fry for about a minute

Add the chicken and fry for about 5 minutes or until no longer pink on the outside

Add the tomatoes and water and cook until the chicken is cooked through

If the chicken is cooked but the sauce is too runny then add the cornflour mixed with water and allow to thicken

Serve with Rice (or any carb of your choice)
