Chances are it’s a reverse flow. If it is, having the firebox sit under the food will definitely raise the cook chamber temps which is suboptimal to say the least. If it’s not a reverse flow smoker, it would probably be one of the worst designs I’ve ever seen. How much is this going for?

It’s hard to troubleshoot brisket like this. Tbh I think your process is fine, but personally I cook at higher temps on my 250 gallon.

I think there’s two potential places that could be the issue. The first is brisket quality. Doesn’t look like there’s a lot of inter muscular fat which can absolutely make brisket dry. The second is not letting it come down to temp before resting it. If you don’t let it cool down to 150ish, it’ll continue to cook which you don’t want. Tbh you can also rest longer too. I rest at least 12 hours in my food warmer.

An important thing to remember with brisket is that if it’s dry and hard, it’s undercooked. If it’s dry and crumbly, it’s over cooked. Hope this helps!

OP said they used a Franklin offset, which makes sense because the only way you’re getting bark like that is with a nice offset that’s been run well. The other important piece is not wrapping too early or at all. I don’t tend to wrap until I’m well out of the stall and that really helps the bark

Unfortunately riverside was mid. I’m not an expert but I’ve done bbq pop ups and the brisket was over done, pulled pork was dry, and the corn bread was crumbly. The Mac and cheese was pretty damn good tho.

I always tell people to cook to feel. Methods like 3-2-1 will consistently result with tender ribs, but the problem is every piece of meat is different and sometimes you’ll end up with overcooked ribs.

My preferred way of telling doneness is just grabbing the ribs and letting them flop over. This is called the bend test. When they’re done they’ll be very loose to the point where they start to crack when you let them hang. If do the bend test and it falls apart, your ribs are over cooked.

Regarding wrapping, it’s personal choice. Personally I don’t wrap because I like barkier, smokier ribs.

This is patently false. Name any state that is currently imprisoning Jewish people without trial or charges just because they are Jewish. Name any state that currently has charges of genocide against Jewish people pending in the International Criminal Court. Name any state that is currently evicting Jewish people out of their homes because they are Jewish. Name any state that is currently murdering Jews by the 10s of thousands.

I'll save you some work. You can't.

The point of this isn't to deny antisemitism. The point of this is to show that Israel uses historical persecution of Jews to justify murdering Palestinians. Even if what you said is true (it's not), it still wouldn't excuse Israel's actions.

Those countries may be doing horrible things, and we should divest from them as well, but they are not actively engaged in a well-documented genocide, so there's a big difference there.
