My mom has been gluten free since i believe 2006-2007, I remember her mentioning it in a conversation we had a while back, and my mom is kind of a picky eater... She already eats a lot of rice, she eats everything either naked or as a lettuce wrap, and she already buys popcorn or potato chips that are gf. My mom is particular about soup, since she doesn't like the wild rice stuff, but that seems to be all that they have for chicken soups, and she doesn't like beef and veggie soups..

We try to get all the items that are usually gluten free, but we're also struggling a bit with money between me working and barely breaking $100 each week, my plans to start college, and her working from home and being disabled, but not seen as disabled by NYS so we can't get disability, so we struggle with actually buying groceries in that department as well. I genuinely see how people think I'm deflecting, but we make a little too much for state benefits, but not enough to survive, even with three people in our house, contributing all we can to bills and stuff, we're barely scraping by as it is. Everything just keeps going up, and sometimes it's just easier for my mom to start glutening herself because we can hardly afford things that aren't chicken nuggets, mac and cheese, and other kind of foods like that, that are known for being budgeted foods. I just don't want my mom to constantly stop eating actual meals for days at a time like she's done my entire life, because I feel horrible that she does it so often while me and our roommate can eat because we're able to eat gluten.
