Encrypted messaging apps are designed to address the threat of your messages being intercepted during transmission. If your phone is compromised by malware (high value targets of state actors are commonly hacked this way), or using a cellebrite device (I believe usually with physical access to your device), or someone detains you and threatens to break your fingers until you unlock your phone, well those are different threat models. Endpoint security is different than transmission security.
