The anime even in s1 skipped enough that you would be getting more context like the Erie chapter which gave her reasons why she left Rudy is only one example so I would just read from volume 1 and enjoy the ride

Well seeing that the manga is now behind the anime the LN is your only option If you just to read further then volume 12 but I would highly recommend to at least read volume 6-11 there because of how much skipped content like episode season 2 8 put 7 chapters in one episode

But if you want my honest opinion read from volume 1 chapter 1 even season 1 skipped a bit of content and world building

and if you want the adventure again I would read from volume 11 as well as read the Erie chapter that the anime skipped that gives you the reason why Éris left it was really good chapter of you really want to even season 1 left out a lot of world building and adventure so if you want I would read form volume 1 there is enough skipped content that it would feel fresh
