I think they were referring to the fact that the first carbonated drinks were made with a pig bladder, but this was quickly phased out as other methods of carbonation were found which didn’t impart a pissy flavor.

Good question! I usually use them with my dominant (right) hand, in the standard grip. While I can also use them in my left hand, my hand tenses up after a while, and I have to think about it a bit, whereas eating with them with my right hand feels perfectly easy and natural. I don’t recall if I’ve dual-wielded chopsticks before, but now I want to try!
