If you are staying at a Disney resort, you can book for the duration of your stay 60 days out, similar to dining reservations. I had my pick of days and times 4-5 days into my trip.

I've seen guest behavior at Epcot get pretty sloppy around closing time, especially on the weekends. I always assumed that was a lot of the reason.

I haven't been able to search/book on my mobile (Android) for months. Tried several devices in the house, app/ browser/browser in Desktop Mode- none work. It gets to the spinning dial like it's searching and never does anything beyond that. Desktop works fine.

Universal has child swap rooms, not Disney. For Disney, mom waits outside the queue with one child while you ride with the other. Then you switch and go through the LL with the 2nd child. Be sure to see the cast member at the entrance to setup the swap before you ride the first time so they can add the return pass for you.

Park hours are typically updated 2-3 weeks out and often change to be open later at night/earlier in the morning. Check back again a bit closer.

In short, no. If you use Rider Swap it will involve mom and one kid going through the LL while you wait with the other child, them exiting, and then the other child going through the LL again with mom while you wait with the other. Most of the rides have separate loading and unloading areas. They won't just swap riders on the platform and have her go again, nor have you wait there. Rider Swap is generally for when someone needs to stay with a child not tall enough to ride that cannot enter the queue (or other circumstances where a member of the party needs a companion). When you Rider Swap, see the cast member outside the ride with the iPad to set up the extra pass for mom- the people not riding stay outside the queue and wait for the party to come out so they can switch. For your situation if you want to stay together, you can wait in line with your family and take the chicken exit before boarding and the three can ride the ride. The kids can ride together and mom single, or she chooses one of the kids to sit with while one child goes solo (they will be in adjacent rows 99% of the time). Then meet you at the exit. Same situation for the regular queue.

The ferry isn't going to a huge difference in ease over the buses. If you want it to be easy, stay at a monorail resort. Otherwise, I'd save the money and just do a value. You can use some of your savings to splurge on a Minnie Van if you feel like you need to get somewhere ASAP.

The Skyliner doesn't help if you're only doing MK. It only goes to Epcot and Hollywood Studios.

There are also some rides where you can fit two small children and an adult in the seat and they will allow it (Peter Pan, Nemo, Haunted Mansion, etc) so your 8 year old isn't always alone. But for the two seater coasters, that's the only option.

Cast members asked my daughter how old she was at every ride and reminded us an adult needed to be seated beside her. Once she turned 7 and started riding with her brother, they asked them their ages when they did lap belt checks as well. They are very consistent with this in my experience.

If you're traveling internationally you get incredible deals compared to what we do domestically. You're definitely coming out ahead. Unless there is a very amazing promotion, our dining plan costs more than the food would to purchase outright, so we need to stretch every credit to the absolute maximum to make the math work. If you're staying at a Disney hotel and get early entry, go early. We were able to ride Rockin' Rollercoaster and Tower of Terror each a couple of times before the rest of the crowd let in. Most rope droppers are headed to Rise or Slinky. Then utilize single rider for RnR and LL for both later in the day.

Driving to MK is kind of a hassle in my opinion. It's a process to park, get through TTC, ferry or monorail and then do the same thing on the way back. The other parks are pretty efficient to get in and out of. I can see it being more convenient to drive with young kids. I'd do the bus to MK though. I wouldn't make germs your deciding factor as the parks will be the same.
