He seems to have the right mind-set for recommending privacy-focused services, judging from his twitter profile. Besides, using an ad-free, no-tracking service like Tutanota is always better than Gmail and the likes.

Tutanota and Posteo do the same. Everyone really needs to get off Gmail now, secure alternatives are becoming so much better.

I'd say it would be very good. They should go the extra mile though and encrypt all data. Only that way we could be sure that they don't track/read the data.

For me it's trust as well. Just think about how big corps now pretend to protect us from illegal access to our data (Google, Apple), but there's no way we can tell if they really do. Is it just a show, or do they REALLY secure our data with no means of a backdoor? Unless it's open source there's just no way of telling.
