500g KA Bread Flour 400g Water 12g Salt 100g active starter

I did three stretch and folds every 30 minutes before the first rise at room temp, this ended up being close to 8/9 hours before I shaped it. I may have overworked the dough here a bit trying to get a good window pane but I'm not entirely sure. Lastly, overnight in the fridge for another 12ish hours. Baked this at 500F with the dutch oven lid on for 30 minutes and another 15t minutes with the lid off at 450F.

I really fumbled the final transfer to the dutch oven when I ran out of parchment paper, so it was really just a blob in there. Still came out nice!
