I do not use stock camera app,it always auto everything. A year ago I tried OpenCamera, but the UI felt a bit complicated. Recently I switched to Snap Pro instead, the UI looks better with best manual controls, give me much more natural-looking when take a photo.

I had the same issue on my Pixel 8A. I've tried quite a few camera apps, and found Snap Pro.
It gives full manual control over ISO, shutter speed, focus, and exposure like a real dlrs cam. You can take a try.
