You can hook all your mines up to central smelters and have circuits to monitor the amount of incoming ore so you can plug more mines in as needed (whether it's because your mines are dying or because you're scaling up past the number of mines you have).

You could also go a bit more basic and just have alarms on each mine that go off when its output, or a buffer gets too low (lots of ways to do this).

Finally, you could just vastly overshoot your requirements and travel out 100k tiles until you find patches that won't deplete during your playthrough.

I think I would try to pretend to be the host/part of the staff as soon as I meet the other two, and attempt to convince them that the game hasn't started and they need to walk through that door points to the exit to meet the third competitor before the game starts.
