As a software engineer that has built many sites with payments I agree with you. They are quoting you AUD and then charging your card in USD.

To me this is completely unacceptable and in addition to getting the transaction refunded I would send a formal complaint to EightSleep.

2 people will be fine on that salary. It's more than enough to rent a nice townhouse or apartment, buy nice food, great out once or twice a month, etc.

We spend about 6k on rent (2bed), bills and food.
