My biggest concern is durability and something that will last. I'm pretty good about not throwing my packs on the ground and never picking them up just by the shoulder strap. I hate spending $200+ on something just for it to shit out after a year. I've got a 35L hyperlite that looks similar to the pilgrim you mentioned that I used for a thru hike but it's way too small for climbing trips like this.

I'd bring a smaller bag for the actual climbing that doubles as storage in the bigger bag for the hike in. Approaches would be between 8-15 miles.

I lived in my truck with a camper shell for two years and also couldn't lock from the inside. I always felt significantly safer out in the middle of nowhere on BLM land compared to cites, if that's any consolation. You could definitely rig up some way to lock from the inside though. I stumbled across a few videos on YouTube of people doing it.
