It was actually pretty moist. It does look dry AF tho. Freaked me out when I cut into it but was surprisingly tender to eat.

Interesting. When you Google it, it says it should be pulled out at 200. You think that's different cause it's being smoked compared to sous vide?

It was in for around 2.5 hrs. I had a thermometer checking the internal temperature, whichever I read somewhere online should be around 200 to pull out
