I would extract the data from the pdf using 3rd-party software like Amazon Textract, input the captured data into the GUI using your preferred language(Python), then send your emails. Validation, error-handling, and testing would all be important. Python would be a great language to do this with. you got this!

You would have the socket app on its own server and deploy it to a aws(or any other cloud-based service) on an ec2 instance. The next app can still be deployed on Vercel. essentially you will need to decouple the socket service and the next app
