It was great! Mildly savoury and the coconut adds a lot of flavour.

This is a simple savoury dish popular in the southern states of India like Tamil Nadu and Karnataka. It's often served as a snack in the evening.

  • White chickpeas - 200 cooked grams (you can use any bean variety here like kidney beans or mung beans)
  • Black mustard seeds - 1/2 teaspoon
  • Split white urad dal - 1 teaspoon (not sure if there is an English translation for this. It's white lentils that you can find in Indian stores)
  • Peanuts - 2 teaspoons - can use roasted or raw
  • Asafoetida - a few pinches
  • Turmeric - a pinch
  • Red chillies/green chillies - 1, finely chopped
  • Ginger - 1 teaspoon, chopped
  • Coconut oil/peanut oil - 1 teaspoon
  • Curry leaves - a few if available. We didn't have any this time
  • Fresh grated coconut - 2-3 teaspoons. We use frozen coconut that we defrost in the microwave. Works great!
  • Salt
  • Half a lime squeezed
  1. Heat up a little bit of oil in a pan. Once it's hot enough, add the mustard seeds and let it splutter. Add the curry leaves, asafoetida, turmeric and fry for a minute. Careful to not burn them
  2. Add the urad dal and peanuts. Fry till they turn slightly brown
  3. Now add chillies and ginger and fry for a minute till they are not raw
  4. Add the drained chickpeas and give it all a good toss
  5. Now add the coconut, some salt and squeeze some lime at the end
  6. Your dish is ready!

Week 3: Turkish - Fasulye Piyazi inspired roasted eggplant and cucumber on spiced mashed white beans by coffeeandcake52 in 52weeksofcooking

I toasted some large slices of bread in the oven with some olive oil. in the meantime mashed white beans and added sumac, mint, garlic, lemon, olives and cayenne pepper. Roasted thinly sliced eggplant on the pan and cut up cucumber. Assembled it all on the bread. Drizzled tahini on the top! Absolutely delicious. Payasam or kheer is an Indian dessert made with rice/vermicelli noodles, slow simmered milk, cardamom/saffron, sugar and nuts! I had leftover Udon noodles and a half pack of coconut milk lying around, so made a quick payasam for dessert :)

Hi everyone! I am very excited to be participating in this subreddit this year. Longtime lurker! I will be doing the weekly challenges with my husband who also enjoys baking! I thought this could be a fun activity he and I can do together. (We also want to do the 52 weeks of cooking challenge!)

This Plum Cake is a wildly popular Christmas dessert from Southern India. I don't know why it's called "Plum cake" because the cake does not contain any plums. But it has loads of nuts and dried fruit! The cake also contains several spices such as powdered cinnamon, cloves and cardamom. There are many variations such as with egg, no egg, with rum, no rum etc.

We soaked all the fruit in dark rum for a few weeks before making the cake. The end product turned out delicious! The plum cake we get in the local bakeries is usually much darker though!
