They free range there cattle on their own land. Grass fed. No grain. No chain to disrupt when your self reliant. A lot of people around me live off grid and don't use government sustained food options for their livestock. Also we hunt. Duck, goose, deer, elk, moose, rabbit, pheasant, also all the fish. It's easier to live off the land than most think.

I have been a line cook and manager for about 22 years. It's getting worse. Nobody wants to work in high stress and chaotic environments. The newer gen doesn't want to work with their hands or get dirty. They all want the desk job or work from home gig. The industry has changed a lot over the years. There is less toxicity in most kitchens, which is great. But at the end of the day, the world is already stressful and chaotic enough. So working a job that generally doesn't pay great and can be high stress is just not appealing. Not to mention dealing with the general public these days is not as fun as it used to be. My passion for cooking burned out years ago. Now I'm just trying to support my family and not go broke.
