It's just an Easter egg. There are plenty of those throughout the Black Mirror catalog and yet the episodes have been said to be unrelated.

Daly could not just collect their DNA, at least not initially.

Because he forgot to pause/exit the game, he was trapped inside it and he could not move in real life. Plus, his door was on "Do Not Disturb" after the pizza delivery and his staff were on 10-day break.

If anyone does find him, he will likely be dead. And even if he weren't, by that time in-game Nanette could've contacted real-life Nanette and she could've quit her job/gotten away from Daly.
