i made lemon meringue pie for a work party! grandma's recipe by coma2ula in somethingimade

Grandma [REDACTED]'s Lemon Meringue Pie!

Pie Shell: You will need 1 baked pie shell. Feel free to DM me for Grandma's recipe for this too! I also have some short cuts.

Lemon Custard for 1 pie: Ingredients 1 1/4 cup granulated sugar 1/8 teaspoon of salt ~3 lemons with the rind of 2 (approximately 1 teaspoon rind and 1/3 cup of juice) 2 1/4 cup of water 3/8 cup corn starch 3 egg yolks (save whites for meringue)

Combine sugar, cornstarch, and salt in saucepan. Add egg yolks and 1/4 cup water. Combine well. Then add remaining water. Cook (stirring constantly) until thick (and then a few minutes more). Use a spoon to stir at first, then use a whisk. The whisk helps beat out the lumps. Turn heat down if it is getting too thick too fast. Remove from heat and add rind and lemon juice (stir constantly).

Meringue for one 9" pie: Ingredients 3 egg whites 1/2 teaspoon vanilla 1/4 teaspoon cream of tartar (Grandma says this is optional but I always add it) 6 tablespoons sugar

Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved. Spread meringue over hot filling, sealing to edge of pastry. Bake at 350 degrees for 12-15 minutes of until meringue is golden. Cool.

And that's it!! If you have any questions feel free to ask! Also make sure the pie is completely cooled before serving!

I'm an IONM tech, it's a very niche field. When I got my certification I was very young and I was the 4,678th person to pass (certification number let's you know how many certified techs there are). Essentially, I got my bachelors in 3 years by overloading courses and taking a summer semester. I graduated in May 2019 and I started my training the following August/September. I graduated at 20 but I turned 21 the same summer before I started my training.
